Arugula Pesto

Yield: 4-6 servings or about 20 tastings

Ingredients:

½ cup  almonds

3 cloves garlic

2 cups arugula, washed and dried

½ cup olive oil

½ cup hard cheese, finely grated

to taste salt & pepper

Directions:

  1. Place the garlic and almonds together in a food processor with a blade attachment. Pulse until finely chopped.
  2. Add arugula, pulse until finely chopped, add grated cheese and pulse just to incorporate
  3. Turn on processor, and drizzle in olive oil while running.
  4. Serve and enjoy!
