Squash Casserole
Ingredients:
Water 1/2 cup
Summer Squash 4 lbs
Med Onion, sliced 2 ea
Salt 2 tsp
Pepper 1 tsp
Butter 3 oz
Flour 6 tbsp
Eggs, beaten 4 ea
Milk 2 cups
Sharp Cheddar, grated 5 cups
Cheese Cracker crumbs 1 cup
Directions:
1. Combine Squash, onion, salt, & water in a deep saucepan. Cover and simmer for about 20 minutes, or until squash is JUST tender. Drain thoroughly
2. While still hot- Mix in butter, cheese (except about 1 pt), flour, milk, then eggs (temper if necessary)
3. Place into 4 small and 2 large disposable casserole dishes (Mac & Cheese containers)
4. Sprinkle with grated cheese and cheese cracker crumbs
5. Bake in 325 oven for 20-25 minutes or until set and golden brown
