Sautéed Mushrooms and Seasonal Greens
Ingredients:
• 1 Tbsp olive oil
• 1/2 lb mushrooms, wiped clean and trimmed
• 1 lb seasonal greens, washed and trimmed
• 2 cloves garlic, minced
• 1″ piece ginger, peeled and grated
• pinch chili flake, salt and black pepper
Directions:
Heat oil in a skillet over medium-high heat. Add mushrooms, and cook stirring occasionally until browned, about 5-7 minutes. Add remaining ingredients and stir until greens are wilted and tender. If needed add 1-2 Tbsp water, cover and cook for an additional 2-3 minutes to be sure the greens are tender.
